I have found the best times to go to meadows are in November-December, when you will usually get fresh Powder, given the fact that for them to open they have to get snow somehow. Also powder days in January and Febuary are fairly common.
When good conditions are abound try to get to meadows early (7:30-8AM) This way you can get freshies in the bowls before heading to Heather canyon. Heather canyon usually opens around 9AM, but after a big dump it may not open until around 2pm, depending on how long it takes ski patrol to do avalanche mitigation work. If it isnt open, Just keep bugging the lifties, and stick to Hood River and Shooting star chairs. You don't want to get stuck in a Line at Mt Hood Express, while everyone else is getting fresh tracks in heathers.
Some good tree skiing can be found on the Runs in Hood River, just don't go with too much untracked powder, or you are likely to get stuck due to lack of steepness.
On bluebird days, cascade is the place for crusing. The long, constant pitched runs such as Boulevard and Stadium make great spots for working out perfect turns. Just beware of ski patrol on crowded days.
If it is open, try Upper Heathers canyon, directally to skiers left at the top of Cascade Express. It may require a minimal hike, depending on the amount of exposed rocks. Once in Upper heathers, you can get great snow conditions almost all the time due to the steep, north facing slope.
For an even better backcountry experience, try crossing over the ridge on the opposite side of heather canyon into Clark Canyon. This area is never groomed, and hardly ever visited. On a run in clark, you may see one other group of people the entire time. Clark canyon connects back with Heather canyon at the Runout, before the Heather chair.
Try the chili, and the Nacho mountain, both are good values for Ski Resort food, and will definatly fill you up. For those on a super budget, bring some frozen stuff, and heat it in the microwave at the Deli.

Like I said before, it's got a nice diversity of fun runs, freindly service and instructors, and other fun things, like night skiing, half pipes, terrain parks, and Saturday night fireworks. I love Meadows!
